Recipe

Slow-Roasted Beef Short Ribs with Red Wine Reduction

Ingredients:

  • 1.5 kg beef short ribs
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 750mL La Tour Travers Travers Rouge 2020 (or a similar red wine)
  • 2 cups beef or vegetable stock
  • 2 tbsp tomato paste
  • 1 sprig rosemary
  • 2 sprigs thyme
  • 1 bay leaf

Instructions:

  1. Preheat your oven to 160°C.
  2. Season the beef short ribs generously with salt and pepper. In a heavy, ovenproof pot, heat the olive oil over medium-high heat and sear the ribs on all sides until deeply browned. Remove and set aside.
  3. Add the chopped onion, garlic, carrots, and celery to the pot and sauté until softened, about 5 minutes.
  4. Stir in the tomato paste and cook for another 2 minutes.
  5. Return the short ribs to the pot and pour in the red wine and stock. Add the rosemary, thyme, and bay leaf. Bring the mixture to a simmer.
  6. Cover the pot and transfer to the oven. Roast slowly for 3–4 hours until the meat is tender and falling off the bone.
  7. Remove the ribs and strain the sauce. Simmer the sauce on the stovetop to reduce and thicken to a rich red wine reduction; adjust seasoning with salt and pepper if needed.
  8. Plate the ribs, drizzle with the red wine reduction, and garnish with fresh herbs. Serve immediately.
