Ingredients:
- 4 chicken breasts (skinless, boneless)
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 shallot, finely chopped
- 2 garlic cloves, minced
- 1 cup Louis Billard Meursault 2022 (or a similar Chardonnay)
- 1/2 cup chicken stock
- 1/2 cup heavy cream
- 1 tsp fresh thyme leaves
- 1 tsp Dijon mustard
- Fresh parsley, chopped (for garnish)
Instructions:
- Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat and sear the chicken until golden on both sides, about 4–5 minutes per side. Remove the chicken and set aside.
- Lower the heat to medium and add the chopped shallot and garlic to the skillet. Sauté until softened, about 2 minutes.
- Deglaze the pan by pouring in the white wine, stirring to loosen any browned bits. Stir in the chicken stock, Dijon mustard, and thyme leaves, then allow the sauce to simmer for 3–4 minutes until slightly reduced.
- Pour in the heavy cream and continue to simmer until the sauce thickens, about 5 minutes. Adjust seasoning with salt and pepper as needed.
- Return the chicken to the skillet, spoon the creamy sauce over the top, and heat through for an additional 2 minutes.
