Louis Billard Saint-Aubin 1er Cru 'Les Castets' is a fine-boned white Burgundy from a village that sits quietly behind two of the Côte de Beaune's grandest names.

Saint-Aubin is tucked into a valley behind Puligny-Montrachet and Chassagne-Montrachet, sharing similar limestone soils but benefiting from a cooler, higher-altitude setting that produces racier, more mineral-driven Chardonnay, often at a fraction of the price of its illustrious neighbours. Les Castets is one of the village's respected premier cru vineyards. Louis Billard is a small, relatively young Burgundy house that has built a fast-growing reputation by sourcing meticulously farmed parcels across top Côte d'Or villages and crafting them with a precise, terroir-focused hand.

A taut, mineral white, it's a natural match for shellfish, goat's cheese and lighter seafood dishes.
