Herbed Roast Chicken with Lemon-Herb Butter Sauce
Ingredients:
- 4 chicken breasts (skinless, boneless)
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 shallot, finely chopped
- 2 garlic cloves, minced
- 1 cup Louis Billard Saint-Aubin Premier Cru "Les Castets" 2022 (or a similar Chardonnay)
- 1/2 cup chicken stock
- 1/2 cup heavy cream
- 1 tsp Dijon mustard
- Juice of 1 lemon
- 1 tsp fresh thyme leaves
- Fresh parsley, chopped (for garnish)
Instructions:
- Season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium-high heat and sear the chicken until golden on both sides, about 4–5 minutes per side. Remove the chicken and set aside.
- Lower the heat to medium and add the chopped shallot and garlic to the skillet. Sauté until softened, about 2 minutes.
- Deglaze the pan by pouring in the Chardonnay, stirring to release the browned bits from the bottom. Add the chicken stock, Dijon mustard, lemon juice, and thyme. Allow the sauce to simmer for 3–4 minutes until slightly reduced.
- Stir in the heavy cream and continue simmering until the sauce thickens, about 5 minutes. Adjust seasoning with salt and pepper if needed.
- Return the chicken to the skillet and spoon the lemon-herb butter sauce over it. Let it heat through for 2 minutes.
