Description
This magnum of Sandrone Barolo Le Vigne Sibi et Paucis is a cellar-aged release of the estate's multi-commune Barolo blend, issued ten years after harvest.
Le Vigne is Sandrone's return to the classic Barolo practice of blending across communes, a habit the single-vineyard movement largely displaced. The parcels differ in altitude, soil and exposure, so the wine reads as a survey of the appellation rather than one site: fruit here comes from Barolo, Serralunga d'Alba, Novello and Castiglione Falletto. Fermentation starts with wild yeasts in tank, followed by malolactic conversion and ageing in mostly used 500-litre French oak casks. Between 20 and 30 per cent of the fruit goes in as whole bunches, time on skins ranges from ten days to a month, and total time in oak runs 20 to 22 months. The wine is bottled unfiltered. Sibi et Paucis is the estate's museum programme, under which a small share of each Nebbiolo bottling is kept in the underground cellars and re-released with a stamp on the label. A magnum evolves more slowly still.
Ready to pour and well suited to a long table. Serve at 16-18°C with bollito misto, porcini pasta or aged Toma.
