Description

AIX is a dry Provence rosé from a single large estate north of Aix-en-Provence.

The estate sits at around four hundred metres in the Coteaux d'Aix-en-Provence appellation, higher and cooler than the coastal vineyards nearer the Mediterranean, which helps hold acidity in a hot climate. Grenache, Cinsault and Syrah are the classic Provençal rosé varieties, picked at night and pressed straight away to keep the colour pale. Provence makes more rosé than any other region on earth and treats it as a serious wine rather than a summer afterthought.

Serve at 10 degrees with grilled fish, salade niçoise or a long lunch. Drink within two years.
