Description

Mas de Libian Vin de France Cave Vinum Blanc is a small-batch biodynamic white from hand-harvested Roussanne, Viognier and Clairette.

Hélène Thibon farms Mas de Libian in the southern Ardèche, on the western flank of the southern Rhône, where the family has worked the land for generations and still ploughs some parcels with a horse. The whites are made in very small volumes. This blend leans on low-cropped Roussanne, more than usual in this release, fermented in barrel with malolactic conversion blocked. The Viognier is raised entirely in cement and stainless steel, while the Clairette ferments in Stockinger demi-muids, so each variety is handled according to what it needs. The wine is released as Vin de France rather than under an appellation. The name is a play on Cave Canem, beware of the dog, the phrase set into the entrances of certain well-to-do houses in Pompeii. Thibon suggests it stands up to a bit of garlic, within reason.

Drinking well now and best within three to four years. Serve at 10-12°C with Mediterranean fish dishes, goat's cheese or grilled vegetables.
