Navazos La Bota 38 Viejo Cream, Bota NO 375ml

La Bota 38 is a very old sweet oloroso drawn from a nine-butt Viejo Cream solera in Jerez.

Cream sherry is oloroso sweetened with Pedro Ximénez, but the usual practice is to blend the two shortly before bottling. Here the blending was done with top-quality Pedro Ximénez at the founding of the solera, probably more than a century ago, so the two have aged together as a single wine ever since. The solera has never been generally available, with only occasional sacas released for British customers. Within it sits a bota NO and, above that, a double NO of notably higher age and character, and this bottling is drawn from the latter in small volume. Equipo Navazos, run by Jesús Barquín and Eduardo Ojeda, works by locating casks of this kind in the bodegas of the Sherry Triangle and bottling them unfiltered, as they stand.

Serve lightly chilled at around 12°C in small measures, after dinner with blue cheese, walnut tart or dark chocolate.
