Occam's Razor Shiraz is a Heathcote Shiraz made by Emily McNally, daughter of Jasper Hill founders Ron and Elva Laughton.
Occam's Razor is Emily McNally's own label, made alongside her work at the family's Jasper Hill estate in Heathcote, central Victoria. The name refers to the principle that the simplest explanation is usually the best, and it reflects the approach in the winery: good fruit, minimal intervention and nothing added that is not needed. Heathcote sits on a spine of ancient Cambrian greenstone, which weathers into the deep red soils that give the region's Shiraz its depth and firm structure. The fruit comes from organically farmed Heathcote vineyards, is hand picked and fermented with indigenous yeasts, then matured in French oak before bottling.
Generous and savoury with a firm backbone, it pairs well with barbecued lamb, beef and mushroom dishes; serve at around 17 degrees.
