Olivier Tricon Chablis is a fresh and elegant white wine from Burgundy, France, crafted from 100% Chardonnay grapes. This light to medium-bodied wine offers enticing aromas of citrus, green apple, and white flowers, with a crisp palate showcasing notes of lemon zest, minerality, and a touch of flint, balanced by vibrant acidity and a long, clean finish.

Recipe

Asparagus Risotto

Ingredients:

  • 1 cup Arborio rice
  • 1 bunch asparagus, trimmed
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup dry white wine
  • 4 cups vegetable stock, heated
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Blanch asparagus in boiling water, then chop into small pieces.
  2. Heat olive oil in a pan and sauté onion and garlic until softened.
  3. Add Arborio rice and toast for 2 minutes.
  4. Pour in white wine and stir until absorbed.
  5. Add stock one ladle at a time, stirring constantly, until rice is tender and creamy.
  6. Stir in Parmesan cheese and asparagus. Season with salt and pepper.
