Asparagus Risotto
Ingredients:
- 1 cup Arborio rice
- 1 bunch asparagus, trimmed
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup dry white wine
- 4 cups vegetable stock, heated
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Blanch asparagus in boiling water, then chop into small pieces.
- Heat olive oil in a pan and sauté onion and garlic until softened.
- Add Arborio rice and toast for 2 minutes.
- Pour in white wine and stir until absorbed.
- Add stock one ladle at a time, stirring constantly, until rice is tender and creamy.
- Stir in Parmesan cheese and asparagus. Season with salt and pepper.
