Recipe

Zucchini Fritters

Ingredients:

  • 2 medium zucchinis, grated
  • 1 egg
  • 1/4 cup plain flour
  • 2 tbsp Parmesan cheese, grated
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • Olive oil, for frying

Instructions:

  1. Grate zucchini and squeeze out excess water. Place in a bowl.
  2. Mix in egg, flour, Parmesan, garlic, salt, and pepper until combined.
  3. Heat olive oil in a pan. Drop spoonfuls of the mixture into the pan and flatten slightly.
  4. Cook fritters for 2-3 minutes on each side until golden. Serve warm.

Tip: Add a dollop of sour cream or Greek yoghurt for a creamy touch.
