Olivier Leflaive Bourgogne Aligoté is made from Burgundy's other white grape, long overshadowed by Chardonnay and now attracting fresh attention.
Aligoté has been grown in Burgundy for centuries and was once planted widely across the Côte, before Chardonnay took the best sites and Aligoté was relegated to the flatter ground and to the making of kir. Interest has returned in recent years, helped by warmer seasons and by a generation of growers who value its natural acidity. Bouzeron, in the Côte Chalonnaise, is the only appellation in Burgundy given over to the variety alone. Olivier Leflaive founded his house in Puligny-Montrachet in 1984 after years at the family domaine, and it has become one of the most reliable addresses in the village. The wine is vinified to preserve freshness, with restrained use of oak.
Serve well chilled, at around 10 degrees, as an aperitif or with oysters, goat's cheese, gougères or a plate of charcuterie.
