Olivier Merlin Bourgogne Blanc 2021

Olivier Merlin Bourgogne Blanc is a regional white Burgundy from a domaine at the heart of the Mâconnais.

Olivier and Corinne Merlin took on the old Domaine du Vieux Saint-Sorlin at La Roche Vineuse in 1987 and, over the decades since, built one of the reference addresses of southern Burgundy; their son Théo now works alongside them. Their reputation rests on treating Mâconnais Chardonnay with the methods of the Côte d'Or: whole-bunch pressing, fermentation and ageing in barrel, long contact with the lees and little intervention beyond that. The Bourgogne Blanc appellation covers Chardonnay grown across Burgundy and sits below the named village appellations, which makes it the least expensive way into a domaine of this standing. Much of the Mâconnais fruit that goes into wine at this level comes from limestone slopes not far from the domaine's own vines.

Serve at around 11 degrees with goat's cheese, white fish or a green salad; it is made to be drunk within its first few years.
