Description
Oratoire St Martin Cairanne Haut Coustias Blanc comes from the estate’s oldest white vines, averaging 75 years, in the coolest and chalkiest corner of its La Montagne terroir.
White is a small part of Cairanne’s output, and this is one of the appellation’s more serious examples. The blend is 30 per cent Clairette, 30 per cent Roussanne, 30 per cent Marsanne and 10 per cent Grenache Blanc, selected from Oratoire Saint Martin’s oldest and lowest-yielding white vines. They face mostly east on the chalkiest and coolest ground within La Montagne, the local name for the steepest part of the commune, average 75 years of age and yield around 20 hectolitres per hectare. The farming is biodynamic. Each variety is harvested and vinified separately, in concrete egg or old foudre, and the components are blended afterwards. Malolactic conversion was avoided in this release, which keeps the acidity firm beneath the wine’s weight and phenolic grip.
Drinking now and will gain over five to eight years. Serve at 10-12°C with roast chicken, grilled fish or a mature hard cheese.
