Description
Haut Coustias is the Alary brothers' Mourvèdre-dominant Cairanne, made from the highest and rockiest plots on the estate.
Cairanne was raised from Côtes du Rhône Villages to its own cru in 2016, and Oratoire Saint Martin, farmed biodynamically, is among the names that earned it that status. The blend is fifty per cent Mourvèdre, forty per cent Grenache and ten per cent Syrah, taken from sixty-five-year-old vines on complex, limestone-rich soils with blue clay, forty per cent active limestone and some alluvial stone. Only around 8,000 bottles are made in a year. The grapes were sorted three times, in the vineyard and then before and after destemming, fermented naturally in concrete, and the wine spent ten months in 22-hectolitre wooden foudres, large enough that the oak leaves no mark.
Worth cellaring for eight to twelve years and best decanted while young; serve at 16-18°C with slow-roast lamb, daube of beef or hard sheep's cheese.
