Paolo Scavino Barolo DOCG 2021

Paolo Scavino Barolo DOCG is the estate's classic bottling, assembled from parcels across several of the communes that make up the appellation.

A Barolo blended across villages is the historic form of the wine, and it remains the clearest statement of a producer's house style. Scavino draws on holdings spread through the zone, so the wine reflects a range of soils and expositions rather than a single hillside. The family estate was founded at Castiglione Falletto in 1921 by Lorenzo Scavino and his son Paolo; Enrico Scavino joined in 1951 and still directs the property with his daughters Enrica and Elisa. Nebbiolo is fermented with an extended maceration and matured in French oak, in line with the minimum ageing that the DOCG requires before release.

Decant before serving at around 18 degrees with braised beef, risotto or aged cheese. It is the natural place to start with the appellation, and will keep developing in the cellar.
