Description
Paolo Scavino Barolo Riserva DOCG is the estate's long-aged bottling, made only in vintages considered worth the extra years in cellar.
Under the rules of the appellation a Barolo Riserva must spend at least five years ageing before release, two more than the standard wine, and producers generally reserve the designation for their finest fruit in the strongest seasons. The Scavino estate was founded at Castiglione Falletto in 1921 by Lorenzo Scavino and his son Paolo, and Enrico Scavino, who joined in 1951, was among the growers who redefined the region in the closing decades of the twentieth century. He works today with his daughters Enrica and Elisa. Nebbiolo is fermented with a long maceration and matured in French oak.
Decant well ahead and serve at around 18 degrees with braised beef, game or aged Piedmontese cheese; it will cellar for many years yet. It is worth opening without hurry, and a large glass helps.
