Paul Bara Special Club 2016

Paul Bara Special Club is a vintage grand cru Champagne released under the shared bottle of the Club Trésors de Champagne, whose members vet one another's wines before bottling.

The Special Club bottling belongs to the Club Trésors de Champagne, an association of grower producers who must submit each candidate wine to a blind tasting by fellow members before it can be released in the club's distinctive bottle, and only estate grown vintage wine qualifies. For Paul Bara that means grand cru Bouzy fruit alone, drawn from the family's holdings on the Montagne de Reims chalk, Pinot Noir dominant in the manner of the village with Chardonnay in support. The family has grown vines here since 1833. The wine is aged at length on lees in the cellars beneath the village and finished at six grams per litre, a dosage low enough to leave the fruit and the chalk to carry the finish.

Serious and vinous, it is best treated as a white wine at the table, with roast poultry, veal or a mature Comté; serve at around eleven degrees.
