Paul Chavy Saint-Aubin Sur Gamay is a premier cru from the high, stony valley behind Puligny-Montrachet and Chassagne-Montrachet.
Sur Gamay is a premier cru of Saint-Aubin, taking its name from the hamlet of Gamay at the head of the valley that separates Puligny-Montrachet from Chassagne-Montrachet. The vineyards sit high and face east and south-east on shallow, very stony limestone, which is why Saint-Aubin whites carry so much of the cut and chalkiness of their far more famous neighbours at a fraction of the price. The wines are typically brisk and citrus-driven with a firm, mineral finish, and they drink well earlier than the grander communes below. Chardonnay from these sites is usually whole-bunch pressed, fermented and aged in barrel with restrained new oak and time on fine lees.
Brisk and mineral, it suits oysters, grilled fish and charcuterie; serve at around 11 degrees.
