Pierre-Yves Colin-Morey Saint-Aubin is white Burgundy from the cool side valley behind Chassagne and Puligny, made by one of the Côte de Beaune's most closely followed white wine specialists.
Saint-Aubin sits in a valley running west off the main slope between Chassagne-Montrachet and Puligny-Montrachet, its vineyards higher, steeper and cooler than those on the Côte itself, planted on thin soils over hard limestone. Long overlooked, it is now among the most sought after white appellations of the Côte de Beaune, giving wines with much of the cut and salinity of Puligny at a fraction of the cost. Pierre-Yves Colin-Morey, based in Chassagne, built his reputation on whites drawn from small parcels across this corner of the Côte: whole-bunch pressing, long fermentations in oversized barrels, very little new oak, no bâtonnage and an extended élevage, with the corks sealed under wax.
Taut, saline and built for the table, it suits oysters, shellfish and grilled white fish; serve at around 12 degrees.
