Description
Pierrick Laroche Domaine des Hâtes Chablis is village Chardonnay from Maligny in the north of the appellation, bottled under screwcap.
The village appellation is the heart of Chablis, drawn from both banks of the Serein on Kimmeridgian marl, a grey clay-limestone laid down in a shallow sea and still full of the small fossilised oyster shells growers cite when they describe the district's saline character. Maligny sits downstream of the town, at the cool northern end, where ripening is slower and the wines tend towards tension rather than weight. Chardonnay is the only permitted grape. Village Chablis of this kind is fermented and raised in stainless steel to keep the wine transparent to its soil, with several months on fine lees for texture and no new oak before bottling.
The classic oyster and shellfish white, equally at home with white fish, chicken and fresh cheeses; serve chilled at around 10 to 11 degrees.
