Pierrick Laroche Domaine des Hâtes Chablis Les Chatillons is a named lieu-dit bottling from village-level Kimmeridgian vineyard in the north of the appellation.
Les Chatillons is a lieu-dit within the Chablis appellation rather than a classified cru, and single-parcel bottlings like this are a way for a grower to show that village ground is not uniform. The soil is Kimmeridgian clay-limestone, the fossil-bearing marl that runs beneath the whole district, and the interest lies in the particular slope, aspect and vine age of the plot. Fruit for a parcel selection is picked and vinified separately from the estate's general village blend, usually with a longer time on fine lees to build texture. Oak, if used at all here, is old and neutral. The bottle is sealed with Diam, a technical cork chosen for consistency and to eliminate cork taint.
A more textured reading of village Chablis; serve at 10 to 11 degrees with oysters, scallops, white fish or roast chicken.
