Poli Distillerie Aperitivo Veneto 'Airone Rosso' is a red bitter aperitivo from a family distillery in the Veneto foothills.

The Poli family have been distilling at Schiavon, below Bassano del Grappa in the Veneto, since 1898, and are now in their fourth generation. They are best known for grappa, and for the small copper stills they use, but the range also takes in gin, amaro and aperitivi drawn from the same Venetian drinking tradition. Airone Rosso belongs to that last group, an aperitivo built on an infusion of herbs, roots and citrus peel in the northern Italian style, made for mixing rather than sipping neat. The family also run the Poli Grappa Museum at Bassano del Grappa, a free museum devoted to the history of distillation in the region, which says something about how seriously they take the craft.

Serve well chilled over ice with soda or sparkling wine as a spritz, or use it in place of any red bitter in a cocktail.
