Pooles Rock Premiere Semillon 2025

Pooles Rock Premiere Semillon is made in the Hunter Valley's distinctive style.

Hunter Semillon is picked early at low sugar, fermented cool in stainless steel and bottled without oak, which gives a lean, citrus-driven wine of around eleven per cent alcohol that turns toasty and honeyed after a decade in bottle. Nothing is added in the cellar; the style depends entirely on picking date and restraint.

Serve at 9 degrees with oysters, whitebait or a green salad. Drink now or cellar for ten years.
