Recaredo Corpinnat Intens Rosat Brut Nature is a deliberately deep-coloured sparkling rose made mainly from Mourvèdre, known locally as Monastrell.

The fruit comes from the Serral del Vell vineyard at 250 metres and Marçaneta at 200 metres, in the Alt Penedes, farmed biodynamically by the Mata family. The blend is Mourvèdre with 12 per cent Grenache. Ton Mata takes a deliberate position against the pale style now fashionable elsewhere, arguing it does not suit the character of the Alt Penedes, so the wine is given six hours of skin contact and comes out an intense ruby. Despite that colour it keeps the subtlety of a fine blanc de blancs, with vinous texture and clear red-fruit definition. It spent 31 months on lees in bottle, was disgorged by hand and bottled brut nature with no dosage, finishing with a biscuity note and a savoury twist from the Mourvèdre.

Drink now or over the next few years; serve at 8C at the table with charcuterie, grilled tuna or a rice dish with rabbit.
