Recaredo Corpinnat Reserva Particular Brut Nature 2014 Disg. May 24

Recaredo Corpinnat Reserva Particular Brut Nature is the house's long-aged cuvée, held on lees for close to 100 months before release.

Reserva Particular was created in 1962 by Josep Mata Capellades, who wanted to show what extended lees ageing could do in the Penedes. It is 55 per cent Macabeu and 45 per cent Xarel·lo, drawn from some of Recaredo's oldest vines, planted between 1950 and 1955 on sloping clay soils that give the wine its breadth and its old-school character. The estate is farmed biodynamically, every bottle is disgorged by hand, and no dosage is added. Almost eight years of bottle ageing produce a beautifully weighted wine with a fine, delicate mousse and the sort of complexity found in mature white wine rather than in young sparkling. It belongs to the Corpinnat designation, which requires organic estate fruit and hand harvesting.

Ready now and best treated as a fine mature white; serve at 8-10C at the table with roast poultry, aged Comté or grilled turbot.
