Recaredo Corpinnat Subtil Brut Nature 2018 Disg. Nov. 2022

Recaredo Corpinnat Subtil Brut Nature is a biodynamic single-vineyard sparkling wine made entirely from Xarel·lo grown on the Serral del Roure estate.

Corpinnat is the mark used by a handful of Alt Penedès estates that left the Cava DO to commit to estate-grown, hand-harvested, organically farmed fruit and long lees ageing. Recaredo farms its vineyards biodynamically from its base at Sant Sadurní d'Anoia. Serral del Roure runs from 210 to 285 metres, and its loamy soils hold a fairly even balance of sand, silt and clay, with slightly more clay than neighbouring Serral del Vell; the result is a rounder, more mouthfilling wine. A portion of the base wine is fermented in Stockinger oak, which adds savoury depth, while the remainder is raised in tank. The wine then spends 36 months in bottle on its lees, is disgorged by hand and receives no dosage.

Approachable now and good for several years in the cellar. Try it with grilled prawns, salt cod or a hard sheep's cheese, served at about 8°C.
