Rieslingfreak No.7 is a fortified Riesling, a style almost no one else in Australia produces.

Fortifying Riesling rather than Muscat or Grenache is unusual: the spirit stops fermentation and leaves sweetness, while the variety's acidity keeps the wine from turning heavy. John Hughes founded the label in 2009 to work with nothing but Riesling, which leads to experiments like this one. The fruit comes from the Clare Valley.

Serve in small glasses at 10 degrees with blue cheese, tarte tatin or dried fruit. An opened bottle keeps for months.
