Description

Rimauresq Côtes de Provence Blanc Cuvée Classique 2022 is a vibrant, organically grown white wine made entirely from Rolle (Vermentino). Highly aromatic and mineral in character, this wine showcases purity and precision with notes of white peach, citrus blossom, and crushed stone. The palate is full and textured, yet fresh and lifted, with a saline edge and a long, clean finish. A superb expression of Provençal terroir that is both refined and refreshing.

Recipe

Soupe au Pistou (Vegetable Soup with Basil Paste)

Ingredients:

  • 2 carrots, diced
  • 2 zucchini, diced
  • 1 onion, chopped
  • 1 leek, sliced
  • 200g green beans, chopped
  • 2 tomatoes, peeled and chopped
  • 1 tin white beans
  • 1L vegetable stock
  • Salt and pepper, to taste

Pistou Paste:

  • 1 bunch fresh basil
  • 2 garlic cloves
  • 3 tbsp olive oil
  • Grated Parmesan (optional)

Instructions:

  1. Sauté onion and leek in olive oil, then add remaining vegetables and stock.
  2. Simmer for 30 minutes until tender. Add beans and cook 10 minutes more.
  3. Blend basil, garlic, olive oil, and cheese to form pistou. Stir into soup just before serving.
  4. Serve with crusty bread and a chilled glass of Rimauresq Côtes de Provence Blanc.
