Roches Neuves Saumur-Champigny 2024

Roches Neuves Saumur-Champigny is a biodynamically farmed Cabernet Franc drawn from parcels across four communes of the appellation.

Saumur-Champigny sits on the left bank of the Loire, on tuffeau limestone that runs beneath the vineyards and the cellars cut into it. Thierry Germain's domaine is certified biodynamic and works numerous parcels around Varrains, Chaintres, Dampierre and Saumur, with vines ranging from ten to seventy years old and averaging around thirty. Among them is the home vineyard, Le Clos, which is ploughed by the family's Ardennais draught horse. The fruit is picked by hand, some parcels are given a cold soak and infusion rather than hard extraction, and fermentation is with wild yeasts. Maturation is mostly in tank, and apart from a small addition of about 10 ppm of sulphur at bottling the wine sees no other additions.

Ready on release and good for five or six years, it handles pork chops, roast chicken, paté and washed-rind cheese equally well. Serve at 16-18°C, or a little cooler.
