Salomon Undhof Steiner Kögl Riesling Reserve 2021

Salomon Undhof Steiner Kögl Riesling Reserve is the estate's flagship dry Riesling, drawn from the oldest vines on the Steiner Kögl.

Steiner Kögl rises steeply behind the old town of Stein, a terraced amphitheatre of weathered gneiss and primary rock held in place by dry stone walls and classified Erste Lage. The Reserve is a selection from the site's oldest plantings, picked later than the estate's regular bottling so the fruit reaches fuller ripeness while the cold night air drawn down the Danube holds the acidity in place. Fermentation is slow and cool, and the wine spends an extended period on its fine lees in large neutral wood, which gives weight and a broader mid-palate without adding oak flavour. Dry and concentrated, it is built for the cellar rather than early drinking.

Powerful yet tightly wound, it rewards decanting and suits roast pork, lobster and richer poultry dishes; serve at around 11 degrees.
