Description

Salvard Val de Loire Pinot Noir comes from a single 1.5-hectare plot on the clay and limestone plains of Cheverny in the central Loire.

Cheverny lies south of Blois in the Loir-et-Cher, a cool, flat corner of the Loire where Sauvignon Blanc and Pinot Noir are the mainstays. Emmanuel and Thierry Delaille go quietly about their business at Domaine du Salvard, best known here for their long-running, well-priced Sauvignon Blanc. This Pinot Noir comes from a small plot of ten- to twenty-year-old vines. Like its white sibling it is fermented and aged entirely in tank, with no oak at any stage, which leaves the fruit unencumbered and the wine light on its feet while still giving it some substance. It is bottled under the broader Val de Loire designation rather than as Cheverny.

Drink over the next two or three years. Serve at 16°C, or lightly chilled, with roast chicken, charcuterie or grilled salmon.
