Description
Salvard Blanc is a Cheverny-grown Sauvignon Blanc raised on lees without any oak.
Cheverny sits in the Touraine, in the middle stretch of the Loire, a little east of Blois and inland from the better-known Sauvignon appellations of Sancerre and Pouilly-Fumé. It is a district that has quietly supplied good-value dry whites for years. Domaine du Salvard is run by the Delaille brothers, and the fruit for this cuvée comes from mature vines rooted in the sandy clay soils of Fougères sur Bièvre. The wine is entirely Sauvignon Blanc, fermented cool and left on its fine lees to build a little texture, with no barrel used at any point. The style is the classic Loire vin de soif: dry, brisk and unadorned.
Drink young, ideally within two years of the vintage. Serve at 10-12°C with goat's cheese, asparagus or grilled seafood.
