Salvard Val de Loire Sauvignon Blanc 2022

Salvard Val de Loire Sauvignon Blanc is the Butterfly label from Domaine du Salvard, an unoaked Sauvignon grown on sandy clay in Cheverny.

Cheverny lies upstream of Touraine in the Loir-et-Cher, well inland of Sancerre, and its better growers make some of the sharper-value Sauvignon Blanc in France. Domaine du Salvard has been a fixture there since Maurice Delaille bought the property in 1900, replanted the vineyards and rebuilt the estate. The fruit for this wine grows on mature vines in the sandy clay soils around Fougères-sur-Bièvre. It is entirely Sauvignon Blanc, raised on its lees with no oak at any stage, and bottled as Val de Loire rather than under the Cheverny appellation. The lees give a little breadth and a chalky texture, while the light soils keep the wine slim and the acidity firm. It is sealed under screwcap.

Drink over the next two years. Serve at 10-12°C with goat's cheese, asparagus or grilled prawns.
