Recipe

Ravioli di Zucca (Pumpkin Ravioli)

Ingredients:

  • 300g fresh ravioli (stuffed with pumpkin and ricotta)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 1/2 tsp fresh sage, chopped
  • 50g grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh sage leaves, for garnish

Instructions:

  1. Bring a large pot of salted water to the boil and cook the ravioli according to the package instructions (usually 2-3 minutes for fresh ravioli). Drain, reserving a little pasta water.
  2. While the ravioli cooks, heat the butter and olive oil in a large pan over medium heat. Add the chopped onion and cook for 4-5 minutes, until softened.
  3. Stir in the chopped sage and cook for another minute until fragrant.
  4. Add the cooked ravioli to the pan and gently toss them in the butter and sage sauce, adding a little pasta water to help coat the ravioli.
  5. Season with salt and pepper to taste, then transfer the ravioli to serving plates.
  6. Sprinkle with grated Parmesan cheese and garnish with fresh sage leaves before serving.
  7. Serve the ravioli warm, alongside a glass of Santa Sofia Valpolicella DOC for a perfect pairing.
