Shaw + Smith M3 Chardonnay 1.5L MAGNUM 2024

Shaw + Smith M3 Chardonnay is the estate's flagship white, from a single vineyard at Woodside planted in 1994.

The M3 vineyard sits at around 400 metres in the Adelaide Hills, high enough that Chardonnay ripens slowly and keeps its acidity through a warm South Australian summer. The name stands for the three founders plus the vineyard: cousins Martin Shaw and Michael Hill Smith MW, who set the business up in 1989. The wine is whole-bunch pressed, wild-fermented in French oak and matured on lees, without malolactic fermentation.

Serve at 12 degrees with crab, roast chicken or salted cod. It develops well over eight years.
