Sylvain Pataille Bourgogne Aligoté 2022

Sylvain Pataille Bourgogne Aligoté is the only blended Aligoté in a range otherwise given over to single-site bottlings of the variety.

Aligoté is Burgundy's second white grape, long treated as an afterthought, and Pataille has done as much as anyone to argue the case for it. Half the fruit here comes from old-vine Aligoté Doré in Marsannay itself, including Auvonnes and Champ Forey on limestone and gravel, with the balance from Échevronne in the Hautes Côtes above Corton. Average vine age across the two sources is more than 50 years, and although this is the entry point to his Aligoté range, the depth and energy that come from old vines and low yields are immediately apparent. The wine ferments naturally in stainless steel, then matures in old foudre before returning to stainless steel for four months ahead of bottling, a regime that keeps the variety's natural cut intact.

Drink over the next three to five years. Serve at 10-12°C with oysters, gougères or a plate of grilled sardines.
