Sylvain Pataille Bourgogne Aligoté Champ Forey comes from 0.3 hectares of Aligoté Doré planted between 1932 and 1961 in Marsannay-la-Côte.
Aligoté is Burgundy’s second white grape and for most of the last century was treated as a filler, but a handful of growers at the northern end of the Côte have made a serious case for it, and Sylvain Pataille at Marsannay is the name most often cited. He bottles several single-lieu-dit Aligotés, of which Champ Forey is one. The vines are the golden-berried Aligoté Doré selection rather than the more common Aligoté Vert, they sit at 250 metres facing east on gravelly limestone, and their age is the main reason the wine has the concentration it does. Fermentation and ageing take place chiefly in used casks, with only about 15 per cent new oak, and the wine spends a year in barrel before bottling. The style is dry, firm and citrus-driven, with the chalky grip Aligoté gives when it is grown properly.
Drinking now and holding for four to five years. Serve at 10-12°C with escargots in garlic butter, oysters or a plate of charcuterie.
