Sylvain Pataille Bourgogne Aligoté La Charme Aux Prêtres comes from a tenth of a hectare of Aligoté Doré planted in 1950 on oyster-shell marl at Marsannay.

La Charme Aux Prêtres is an east-facing slope running from 280 to 320 metres above Marsannay-la-Côte, and Pataille has both Chardonnay and Aligoté within his 0.17-hectare holding. The Aligoté portion, 0.10 hectares of old Aligoté Doré, lies at the foot of the vineyard on ostrea acuminata marl, a limestone marl studded with fossil oyster shells that is found in thin bands through the Côte and is prized for the tension it gives white wines. Pataille credits that soil with the smoky, reductive minerality he consistently finds in this cuvée. Vinification follows his usual practice for Aligoté: fermentation with indigenous yeasts, ageing chiefly in used casks and a year in barrel before bottling, with nothing done that would blur the difference between one lieu-dit and the next.

Drinking now and worth four or five years. Serve at 10-12°C with grilled sardines, a goat’s cheese salad or steamed pipis.
