Sylvain Pataille Marsannay Fleur de Pinot Rosé 2022

Sylvain Pataille Marsannay Fleur de Pinot Rosé is a rosé given a two-year élevage in barrel and foudre, in the manner of Marsannay’s historic vins de fêtes.

Marsannay is the only Côte d’Or village permitted to bottle rosé under its own appellation, and the style is a genuine local tradition rather than a modern convenience. Pataille’s version is 80 per cent Pinot Noir and 20 per cent Pinot Beurot, the Burgundian name for Pinot Gris. Half the fruit is direct-pressed and half macerated on skins for three days. The old Pinot Noir vines grow on rocky white marl in Charmes aux Prêtres, planted in 1949, and Champ Forey, planted in 1934 — limestone-heavy sites normally given over to white grapes, which is part of why the wine has the texture of a white. The Pinot Beurot comes from 1932 vines at En Blungey on clay. Ageing runs to two years: twelve months in older 600-litre barrels, then a 48-hectolitre foudre. Pataille asks for at least two years in bottle before the terroir emerges from behind the fruit and tannin.

Good now, better in two or three years. Serve at 10-12°C with roast chicken, charcuterie or a tomato and olive tart.
