Description
Sylvain Pataille Marsannay Rouge is a patchwork of more than two hectares of vines across Chenôve, Couchey and Marsannay-la-Côte.
Marsannay is the only appellation in Burgundy entitled to produce red, white and rosé under its own name, and its red wine is the mainstay. Sylvain Pataille's village red is arguably his signature bottling, assembled from vines spread across the three communes of Chenôve, Couchey and Marsannay-la-Côte, so it reads as a portrait of the appellation rather than a single site. All the vines were planted between 1950 and 1980, which means even the youngest are over forty years old. The wine ages in a mixture of used barriques and several old 600-litre demi-muids, and the final blend includes around 50% whole bunches. As throughout the domaine, ferments are natural and sulphur use is minimal.
Drink from release and over the next eight years; serve with roast chicken, charcuterie or coq au vin at 16-18°C.
