Description
Te Mata Cape Crest is a barrel-fermented Sauvignon Blanc, a very different proposition from the Marlborough style.
Hawke's Bay's warmth gives Sauvignon Blanc more weight and less overt aromatics than the South Island, which makes barrel fermentation viable: the oak adds texture rather than covering fruit. Cape Crest has been made since 1985 and usually carries a small proportion of Semillon and Sauvignon Gris. The wine is fermented and matured in French oak, largely seasoned, with lees stirring for texture.
Serve at 11 degrees with roast fish, chicken or a creamy risotto. It ages well for six years.
