Terroir al Límit Priorat Históric Negre is a Grenache-led red made to roughly the proportions Priorat used a generation ago.
Priorat's modern reputation was built on dense, oak-framed wines, but the older practice in the region was a Grenache and Carignan blend of lighter build, and that is what this bottling revisits, at 75 per cent Grenache to 25 per cent Carignan. Terroir al Límit, founded at Torroja del Priorat by Dominik Huber, works deliberately against the blockbuster image, favouring whole bunches, indigenous yeasts and restrained extraction. A good share of the Grenache is grown at La Morera, high in the Montsant ranges on clay and limestone, which brings lift and freshness; the remainder of the fruit comes from vines across Priorat on the slate and schist known locally as llicorella, which supplies the savoury, mineral spine. Fermentation is whole-cluster, after which the wine spends six months in a 5,000-litre concrete tank, with no oak involved at any point.
Open now or hold for up to a decade; serve at 16-17°C with grilled lamb, rabbit with rosemary or a mature Manchego.
