Terroir al Límit Priorat Históric Negre 2021

Terroir al Límit Priorat Históric Negre is a Priorat red fermented and raised entirely in concrete, with no oak at any stage.

Priorat, in southern Catalonia, is a landscape of concertinaed hills and licorella slate, and its modern reputation was built on dense, oak-raised reds. The Históric bottlings are Dominik Huber's argument for the older idiom. The blend is 75% Grenache and 25% Carignan, close to what would have been planted here a generation ago. A good part of the Grenache comes from La Morera, high in the Montsant ranges on clay and limestone soils, while the remainder is grown on the slate and schist that gives the wine its savoury edge. The bunches are fermented whole with indigenous yeasts, the approach closer to infusion than to extraction, and the wine then spends six months in a 5,000-litre concrete tank. It is bottled without any oak influence, which leaves the fruit and the stony character of the sites in the foreground.

It is open and drinkable young and will hold for five years or so; try it with grilled lamb, mushroom rice or a hard sheep's cheese. Serve at 16–18°C.
