Terroir al Límit Priorat Pedra de Guix is a white Priorat drawn from three varieties across three villages, classified by the estate as Vi de Coster.
White Priorat is scarce, and Pedra de Guix is the most sculpted example the estate makes. It blends Grenache Blanc from Poboleda on schist, Macabeo from Torroja on alluvial soils, and Pedro Ximénez from the chalk and gypsum soils of El Lloar; the old vines across those sites are between fifty and eighty years of age. Terroir al Límit, the Torroja estate founded by Dominik Huber, ranks it as Vi de Coster, the local equivalent of a premier cru. The grapes are gently basket-pressed over several hours, and fermentation begins in cement tank before the wine moves to old, neutral Austrian oak foudres for eighteen months. Where earlier releases carried more skin contact, most of the fruit is now pressed off before fermentation, so the style leans on purity and tension while keeping the structure and salinity the rocky soils give. It is bottled unfiltered.
It rewards a decade in the cellar and gains from decanting; serve at 12°C with roast chicken, grilled turbot or a hard goat's cheese.
