Théo Dancer Bourgogne Aligoté 2022

Théo Dancer Bourgogne Aligoté is now made from old-vine Aligoté in Meursault, having previously come from young vines in the Hautes-Côtes de Beaune.

Aligoté has spent most of its history as Burgundy's second white grape, planted on the flatter or higher ground left over after Chardonnay, but old vines on good sites tell a different story. Théo Dancer's earlier bottlings came from young vines at Nantoux, in the Hautes-Côtes de Beaune; from 2022 he has worked instead with old-vine Aligoté in Meursault, a more powerful terroir that has changed the wine considerably. It is handled in the same way as the Vincent Dancer whites, fermented and raised in large-format barrel over the winter, then rested in vat before bottling. There was a single racking and the barest addition of sulphur at bottling. The wine is pulpy and generous, with more depth than the appellation would suggest, and finishes long and racy.

Best drunk within two or three years. Serve at 10-12°C with oysters, gougères or a plate of cured ham.
