Théo Dancer Bourgogne Aligoté 2023

Théo Dancer's Bourgogne Aligoté comes from a plot of organically farmed old vines in Meursault.

Théo Dancer, son of Vincent Dancer at Chassagne-Montrachet, set up his own small négociant label and has been building it parcel by parcel. From 2022 he has worked with this old-vine Aligoté in Meursault, and the change in fruit source lifted the wine considerably. It is handled exactly as the Vincent Dancer whites are: natural fermentation with all its lees, no bâtonnage, maturation in large-format barrels over the winter, then a rest in vat, a single racking and bottling without filtration. Aligoté responds well to this hands-off treatment, keeping its natural acidity while the lees contribution adds weight. The parcel is certified organic, and yields are naturally low from vines of this age.

Drink young and cold, over the next four years; serve at 10–12°C with oysters, shellfish or gougères.
