Théo Dancer Vin de France Botanica Gamay 2022

Théo Dancer Vin de France Botanica Gamay is made from organically grown fruit in Chiroubles and raised in amphora and old cask.

Théo Dancer, son of the Chassagne grower Vincent Dancer, works out of Burgundy on a small négociant basis, buying fruit from growers he knows and applying a light hand in the cellar. This Gamay is now sourced from an organic grower in Chiroubles, the highest of the Beaujolais crus, where granite soils and altitude give a fine-boned style of the variety; earlier releases came from a friend's vineyard at Lancié, near Fleurie. The winemaking has not changed: the grapes are entirely destemmed, so there is none of the carbonic lift that defines much of Beaujolais, and the wine matures in a combination of amphora and old cask. The change of source has given the wine a more Burgundian cast, with silky, plummy fruit and a fine, powdery structure.

Drinking well now and good for four or five years. Serve at 16-18°C with roast pork, charcuterie or a mushroom and thyme tart.
