Théo Dancer Vin de France Botanica Gamay is a Chiroubles-sourced Beaujolais made without carbonic maceration, in the manner of a Burgundian red.
Chiroubles is the highest of the Beaujolais crus, sitting above 400 metres on decomposed granite, and it is the one that gives the lightest and most perfumed wines of the ten. Théo Dancer buys his fruit here from an organic grower. The winemaking has stayed constant across releases: the grapes are fully destemmed and the wine ferments and matures in amphora and old cask, with no carbonic step at all. His fellow Burgundian Benoît Moreau takes a similar approach to Chiroubles, on the reasoning that a longer, Pinot-like fermentation lets the wine carry more of its site and less of the winemaking. Bottled as Vin de France rather than under the cru, it is an infusion-style Gamay, bright and red-fruited but with ink and anise on the close and fine powdery tannins that mark it out as a serious wine.
Lovely now and good for four to six years. Serve at 16-18°C, or lightly cooled, with charcuterie, roast chicken or a mushroom tart.
