Théo Dancer Vin de France Jurassique Savagnin is a topped-up Jura Savagnin from Rotalier, made to show terroir rather than flor character.

Théo Dancer runs a micro-négoce alongside the family domaine, buying tiny quantities of fruit from four vineyards around France so he can work with growers he admires and with varieties he does not farm himself. The Savagnin comes from a conscientious farmer in Rotalier, in the southern Jura, the same village as Ganevat and Julien Labet, where chalky clay sits over Bajocian limestone. Savagnin is often aged under a veil of flor, but Dancer wants purity and site rather than oxidative notes, so this is made ouillé, meaning topped up. The fruit is pressed directly to large oak barrels, left unracked until fermentation finishes, and the barrels are kept full throughout maturation. The result is citrusy and tightly wound with a powdery grip, and it broadens considerably with air.

Do not serve it too cold, and decant if drinking young; it suits Comté, roast chicken or trout. Serve at 10-12°C.
